This vegetable only dish is the perfect, healthy side for BBQ or busy weekdays. If you are doing banting you can just add protein or if you are doing a no meat dinner, just serve this with some rice or pasta.


  • 3 baby marrow/zucchini
  • Oil for cooking
  • 1 diced tomato
  • 1 diced onion
  • 1 tsp crushed garlic
  • 1 leek
  • 1 apple sliced
  • 1 can of diced tomato (I used tomato and mixed herbs)
  • 1 tbsp tomato puree
  • 1 tbsp chili chipotle sauce
  • 2 tbsp worcester sauce
  • 175g zucchini/baby marrow spaghetti (half a pack)
  • 2 tsp curry powder
  • Italian herb spice to taste
  • Salt & pepper to taste
  • Smoked paprika to taste

In a pan sauté the tomato, onion, garlic, leek, apple and spices in oil until the veggies become tender (about 5-10min).

Add in the can of diced tomatoes and stir all the ingredients together.

Add the zucchini noodles, tomato puree, worcester sauce and chipotle sauce. Simmer until soft. You can add in more spices if desired. Serve warm.
