Veggies only (mushroom, butternut and avo)

Have you ever felt like you needed a bit of a break from meat? I do, especially after the holidays. This dish is so easy and so tasty and can be served multiples ways.

You can serve it on a bun (I needed a break from carbs too) or add a juicy patty if you feel like you need the meat.

Ingredients

  • 4 Portabellini mushrooms (or for however many people you are making)
  • 500g cooked or steamed diced/chopped butternut
  • 2 avocados
  • 1 onion
  • 1 teaspoon garlic
  • 2 wheels of feta
  • Salt and pepper to taste
  • Balsamic vinegar to taste

Sauté the garlic and onion in some butter until soft and set aside. In the same pan, fry the mushrooms until it is soft enough for you to eat (about 30 min). Add more butter in necessary.

On your server plate, place the mushroom followed by the onion mixture and butternut. Add half of an avocado and half a wheel of feta cheese on top. Top that off with salt, pepper and a dash of your favourite balsamic vinegar.

Serve warm and enjoy 🙂
