Easy does it do it yourself: Saucy gammon served with veggies

This gammon is perfect for your Sunday lunch especially if you need to feed a few mouths.

Ingredients:

  • Gammon (any size, mine was about 1.5kg)
  • 1 large onion chopped
  • 4 -5 Garlic cloves
  • 500 ml chicken stock (or less if you want less sauce)
  • White wine (+- 125ml) ( I used a dry wine)
  • 15 ml Soy sauce
  • 2 tablespoon Peach chutney
  • Apricot jam for glazing
  • 1 tablespoon Honey
  • Meat seasoning to taste
  • A bunch of fresh herbs such as thyme and basil
  • Pepper to taste
  • Smoked paprika to taste

Warm up your oven to 180 degrees. Your gammon will bake about 30 min for every 500 grams it weighs so be sure to take note of it. In a deep oven bowl place half of the chopped onion as well as 2 – 3 chopped up garlic gloves.

Spice the bottom of the gammon to taste with smoked paprika, meat spice and pepper. Be careful not to put too much spice on as the gammon is already salty by nature.

Prepare the chicken stock and add a dash of white wine as well as the soy sauce, peach chutney and honey.

 

 

 

 

 

 

 

 

 

Pour the chicken stock mixture over the gammon and top of with the remaining onion, fresh herbs and garlic.

Cover the gammon with foil and place it in the oven. After about one hour (depending on the weight or just over half the time) remove the foil and glaze the top of the gammon with apricot jam. Bake open for the remaining 30 min.

Serve warm with your favorite veggies and rice or bread to soak up the sauce.
