Easy does it do it yourself: Mother in law gingerbread cookies

No Christmas is complete without some gingerbread cookies. There are many gingerbread cookie recipes out there but this one that I received from mom in law is better half’s favorite (and mine too).

Ingredients:

  • 250g Butter
  • 2 cups sugar
  • ½ cup of syrup (125 ml)
  • 2 eggs
  • 5 cups flower
  • 2 teaspoons Bicarb of soda
  • 2 teaspoons ginger spice (2 heaped teaspoons if you prefer it more gingery)
  • 2 teaspoons cinnamon spice
  • 2 teaspoons mixed spice

Cream the butter and sugar. Add the two eggs, one at a time. Add the syrup followed by the sifted ingredients (dried).

Once the dough is formed (play dough consistency), place in the refrigerator overnight in an airtight container (this is the key to this recipe).

Take the dough out of the fridge the next morning. Once it reaches room temperature you can roll the dough into little balls and flatten with a fork. Bake at 180 degrees until baked (+- 14 min, turn after 7 min), be careful not to burn it.
